  • 0.5 cups unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or non-stick spray.
  2. In a bowl, mix the flour, baking soda, salt, cinnamon, and nutmeg together.
  3. In another bowl, mash the ripe bananas and mix in the melted butter. Add the sugar, eggs, and vanilla, stirring well.
  4. Combine the wet mixture with the dry ingredients until just mixed – be careful not to over mix.
  5. If you want to add nuts or chocolate chips, fold them in gently.
  6. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake in the preheated oven for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
