Preparation
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or non-stick spray.
- In a bowl, mix the flour, baking soda, salt, cinnamon, and nutmeg together.
- In another bowl, mash the ripe bananas and mix in the melted butter. Add the sugar, eggs, and vanilla, stirring well.
- Combine the wet mixture with the dry ingredients until just mixed – be careful not to over mix.
- If you want to add nuts or chocolate chips, fold them in gently.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake in the preheated oven for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes
Use very ripe bananas for the best flavor. The more brown spots, the sweeter they are. Don't over mix the batter; it should be lumpy for a perfect texture. For added moisture, you can replace some of the butter with yogurt or applesauce. Experiment with different nuts or add chocolate chips for a unique twist. To store, wrap tightly in plastic wrap or aluminum foil and keep at room temperature for up to 3 days, or freeze for longer storage.
