Preparation
  1. Season the chicken cutlets on both sides with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
Cooking
  1. Add the chicken and sear for 4–5 minutes per side until golden brown. Remove the chicken and set aside.
  2. Reduce heat to medium and add garlic to the skillet; cook for 30 seconds until fragrant.
  3. Stir in diced tomatoes, artichokes, Italian seasoning, and red pepper flakes if using.
  4. Bring the sauce to a gentle simmer, then return the chicken to the skillet.
  5. Cover and simmer for 10–12 minutes until the chicken is cooked through (internal temperature should reach 165°F) and the sauce has thickened slightly.
  6. Taste and adjust seasoning as needed. Serve hot.
