  • 1 pound ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • Tortilla chips for serving

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add the black beans, corn, diced tomatoes with green chilies, and taco seasoning to the skillet. Stir to combine.
  3. Cook for about 5-7 minutes, allowing everything to heat through.
  4. Remove from heat and sprinkle the shredded cheese on top. Cover the skillet for a few minutes until the cheese melts.
  5. Serve the mixture hot with sour cream on top and tortilla chips on the side for dipping.

Notes

This dish is best served warm. You can serve it right out of the skillet or transfer it to a large serving bowl. Place the tortilla chips around the bowl for easy dipping. Add extra sour cream and jalapeños for those who like a little heat. If you have leftovers, let them cool completely. Store them in an airtight container in the refrigerator for up to three days. You can also freeze the mixture for up to a month. Just thaw in the fridge before reheating. For added flavor, cook some chopped onions and bell peppers with the ground beef. You can customize the recipe by adding cooked chicken or turkey instead of beef. Use fresh cilantro as a garnish for a fresh touch. If you like it spicy, add diced jalapeños to the mix. You can easily make this recipe vegetarian by omitting the ground beef and adding extra beans or vegetables like bell peppers and zucchini.
