  • 3 ripe bananas 3 ripe bananas Use very ripe bananas for the best flavor and sweetness.
  • 1/3 cup 1/3 cup melted butter
  • 1 teaspoon 1 teaspoon baking soda
  • 1 pinch Pinch of salt
  • 3/4 cup 3/4 cup sugar
  • 1 large 1 large egg, beaten Can replace with a flax egg or unsweetened applesauce for a vegan option.
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 cup 1 cup all-purpose flour Don’t overmix the batter; mix just until the flour is combined for a tender loaf.
  • 1/2 cup 1/2 cup chopped walnuts (optional) Feel free to leave them out or substitute with chocolate chips.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 4x8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
  3. Mix in the baking soda and salt.
  4. Stir in the sugar, beaten egg, and vanilla extract.
  5. Mix in the flour until just combined. Fold in the walnuts if using.
  6. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for a few minutes before transferring to a wire rack.
