Ingredients
  

Tea Base
  • 4 cups water Use filtered water for the best taste.
  • 3 tablespoons puerh tea You can substitute with loose-leaf black tea if desired.
  • 8 pods cardamom Crushed for better flavor extraction.
  • 6 whole cloves
  • 2 pods star anise
  • 1 stick ceylon cinnamon
  • 1 tablespoon dried ginger Do not use powdered ginger.
  • 1 tablespoon fennel seeds
  • 2 teaspoons coriander seed
  • 2 teaspoons black peppercorns
  • 1/2 teaspoon anise seeds
Sweeteners and Fats
  • 1 tablespoon jaggery Can substitute with honey or sugar if preferred.
  • 1 tablespoon ghee Use plant-based butter for a lighter version.
  • Pinch N/A fine sea salt Enhances the flavors.
Milk
  • 1/4 cup whole milk Almond or coconut milk can be used for a dairy-free option.

Method
 

Preparation
  1. Bring water to a boil over high heat, and drop in the tea and spices.
  2. Immediately reduce the heat to medium and simmer for 10 minutes.
  3. Remove from the heat and strain the tea.
Serving
  1. To prepare a cup of the tea, heat one cup of the prepared tea in a saucepan over medium-high heat until it’s very hot.
  2. Stir in the jaggery and salt until completely dissolved.
  3. Stir in the ghee and whole milk.
  4. Turn off the heat and blend until frothy with a hand-held milk frother.
  5. Pour into a teacup and serve hot.

Notes
