  • 1 pound breakfast sausage (pork, turkey, or plant-based)
  • 6 large eggs
  • 1 cup bell peppers, diced (any color)
  • 1 cup spinach, chopped
  • ½ cup onion, diced
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • Salt and pepper to taste
  • Olive oil or cooking spray for the pan

Method
 

Cooking
  1. In a large skillet, heat over medium heat. Add the sausage and cook until browned and cooked through, breaking it into crumbles as it cooks (about 8-10 minutes). Drain excess grease if necessary.
  2. Add the diced onion and bell peppers to the skillet with the sausage. Sauté until the vegetables are tender (about 5 minutes).
  3. Stir in the chopped spinach and cook until wilted (about 1-2 minutes).
  4. In a bowl, whisk the eggs with salt and pepper until well combined.
  5. Push the sausage and vegetable mixture to one side of the skillet. Pour the eggs into the empty side and scramble them until fully cooked (about 3-4 minutes).
  6. Once the eggs are cooked, mix them with the sausage and vegetables.
  7. Sprinkle shredded cheese over the top and cover the skillet for a minute to allow the cheese to melt.
  8. Divide the mixture among bowls. Top with optional toppings like avocado, salsa, or hot sauce for added flavor.
