Old Fashioned Banana Bread

A classic treat that everyone loves, this moist and flavorful loaf is perfect for using up overripe bananas and is great for breakfast, snacks, or dessert.

Main Ingredients
  • 3 medium Medium-size bananas, extra ripe (mashed, about 1 1/4 to 1 1/2 cups) Use very ripe bananas for best flavor.
  • 1 cup White granulated sugar Adjust to taste.
  • 1/3 cup Canola oil Can substitute with vegetable oil or melted butter.
  • 2 large Large eggs (room temperature)
  • 1 tsp Vanilla extract
  • 1 1/3 cups All-purpose flour (sifted) Can be substituted with whole wheat flour.
  • 1 tsp Baking soda
  • 1/2 tsp Salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Spray a 9x5 loaf pan with nonstick spray and line the bottom and two sides with parchment paper.
  2. In a large bowl, add the 3 extra ripe bananas. Use a fork to mash the bananas until smooth.
  3. Add the sugar to the mashed bananas and mix to combine.
  4. Stir in the eggs, vanilla extract, and canola oil until well mixed.
  5. Sift the flour, baking soda, and salt together. Gradually add this to the banana mixture and stir just until combined.
Baking
  1. Pour the batter into the prepared loaf pan.
  2. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
Cooling
  1. Let the banana bread cool completely before removing it from the pan.

Notes
