Preparation
- Preheat the oven to 350°F (175°C). Spray a 9x5 loaf pan with nonstick spray and line the bottom and two sides with parchment paper.
- In a large bowl, add the 3 extra ripe bananas. Use a fork to mash the bananas until smooth.
- Add the sugar to the mashed bananas and mix to combine.
- Stir in the eggs, vanilla extract, and canola oil until well mixed.
- Sift the flour, baking soda, and salt together. Gradually add this to the banana mixture and stir just until combined.
Baking
- Pour the batter into the prepared loaf pan.
- Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
Cooling
- Let the banana bread cool completely before removing it from the pan.
