Preparation
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or cooking spray.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Add the melted butter to the mashed bananas and mix well.
- Stir in the granulated sugar (and brown sugar, if using) until combined.
- Add the beaten eggs and vanilla extract, mixing until smooth.
- In another bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture, stirring just until combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for about 60-65 minutes or until a toothpick inserted in the center comes out clean.
- Let the banana bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
