  • 2 large eggs, beaten
  • 1 teaspoon vanilla extract Optional but enhances aroma
  • 2 cups all-purpose flour Can try 1 cup whole wheat combined with 1 cup all-purpose for a nuttier flavor
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or cooking spray.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Add the melted butter to the mashed bananas and mix well.
  4. Stir in the granulated sugar (and brown sugar, if using) until combined.
  5. Add the beaten eggs and vanilla extract, mixing until smooth.
  6. In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  7. Gradually add the dry ingredients to the banana mixture, stirring just until combined. Do not overmix.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for about 60-65 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the banana bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
