Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour (spooned & leveled)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light or dark brown sugar, packed
  • 2 large eggs, room temperature
  • 1/3 cup plain Greek yogurt or full-fat sour cream
  • 1 1/2 cups mashed bananas (about 3–4 ripe bananas)
  • 1 teaspoon pure vanilla extract
Optional Mix-Ins
  • 3/4 cup chopped pecans or walnuts
  • 1 cup semi-sweet chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (177°C) and grease a 9×5-inch loaf pan with nonstick spray.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set this mixture aside.
  3. In a large bowl, beat the softened butter and brown sugar until it becomes light and creamy.
  4. Add the eggs one at a time, mixing well after each addition. Then, mix in the Greek yogurt, vanilla extract, and mashed bananas until everything is combined.
  5. Gradually mix the dry ingredients into the wet mixture on low speed until just combined. If you want to add nuts or chocolate chips, fold them in at this stage.
Baking
  1. Pour the batter into the prepared loaf pan and bake for 60–65 minutes. Halfway through, loosely cover it with foil to prevent over-browning. Check if it’s done by inserting a toothpick into the center; it should come out clean.
Cooling
  1. Let the bread cool in the pan for 1 hour, then remove it and cool on a wire rack before slicing.

Notes

Use overripe bananas for the best flavor and sweetness. Make sure your butter is softened to help it mix well with the sugar. Don’t overmix the batter—mix just until combined for a light texture. If using frozen bananas, thaw and drain any excess liquid before mashing.
