Cooking
  1. In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned.
  2. Add onions, carrots, and celery, cooking until softened (about 5 minutes).
  3. Stir in garlic and cook for an additional minute.
  4. Pour in the chicken broth and diced tomatoes.
  5. Add Italian seasoning, salt, and pepper.
  6. Bring to a simmer and cook for 15-20 minutes.
  7. Lower the heat and stir in the heavy cream.
  8. If using, add fresh spinach or kale and cook until wilted.
