Method
 

Cooking
  1. In a large pot, brown the ground beef with chopped onion until fully cooked. Drain excess fat.
  2. Add the diced potatoes and beef broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  3. Once the potatoes are tender, stir in the milk and cheese until melted. Season with salt and pepper to taste.
  4. Serve the soup hot, topped with cooked bacon and chives if desired.
