  • 2 fillets salmon fillets Use fresh salmon for the best taste.
  • 2 large potatoes, diced Don't overcrowd the baking sheet with potatoes.
  • 1 head of broccoli, cut into florets Cook until bright green and tender.
  • 3 tablespoons butter Melt in a skillet over medium heat.
  • 1 lemon juiced and zested Adjust according to taste preference.
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix the diced potatoes with olive oil, salt, and pepper. Spread them on a baking sheet.
Cooking
  1. Bake the potatoes for about 20 minutes, or until they start to get crispy.
  2. While the potatoes are baking, heat a skillet over medium heat and melt 3 tablespoons of butter.
  3. Add the salmon to the skillet and cook for about 5 minutes on each side, pouring in lemon juice and zest while cooking.
  4. Add the broccoli to the skillet during the last few minutes of cooking the salmon. Cook until broccoli is bright green and tender.
  5. Take the potatoes out of the oven and serve them alongside the salmon and broccoli.
  6. Garnish with fresh parsley if desired, and enjoy!

Notes
