Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix the diced potatoes with olive oil, salt, and pepper. Spread them on a baking sheet.
Cooking
- Bake the potatoes for about 20 minutes, or until they start to get crispy.
- While the potatoes are baking, heat a skillet over medium heat and melt 3 tablespoons of butter.
- Add the salmon to the skillet and cook for about 5 minutes on each side, pouring in lemon juice and zest while cooking.
- Add the broccoli to the skillet during the last few minutes of cooking the salmon. Cook until broccoli is bright green and tender.
- Take the potatoes out of the oven and serve them alongside the salmon and broccoli.
- Garnish with fresh parsley if desired, and enjoy!
