  • 1/2 teaspoon Baking Soda Transforms the tea into its signature pink hue; use sparingly.
  • 1 whole Star Anise An aromatic spice that adds warmth; can be omitted if unavailable.
  • 4 pods Cardamom Pods Flavor enhancer; crush to release aroma or use ground cardamom.
  • 1 stick Cinnamon Stick Adds depth; ground cinnamon works well too.
  • 1/4 teaspoon Salt Elevates the flavors; use sparingly.
Creamy Component
  • 2 cups Whole Milk Provides a creamy richness; can swap for almond or oat milk.
Sweeteners and Garnish
  • to taste Sugar or Honey Sweetener to taste; can adjust or substitute with maple syrup.

Method
 

Preparation
  1. Start by boiling 4 cups of water in a pot.
  2. Once the water is boiling, add 2 tablespoons of Kashmiri green tea and 1/2 teaspoon of baking soda.
  3. Allow the mixture to simmer on low heat for about 10-15 minutes, stirring occasionally.
  4. After simmering, strain the tea into another pot to remove the leaves and add the spices.
  5. Add the whole star anise, crushed cardamom pods, and the cinnamon stick to the strained tea. Sprinkle in 1/4 teaspoon of salt.
  6. Pour in 2 cups of whole milk and bring the mixture to a gentle boil again.
  7. Sweeten with sugar or honey to taste.
  8. Remove from heat and pour into cups.

Notes
