Ingredients
  

Vegetable Base
  • 2 cups chopped vegetables (carrots, celery, onions) Use fresh, seasonal vegetables for the best flavor.
  • 4 cups vegetable or chicken broth Ensure broth is gluten-free if needed.
  • 1 cup diced tomatoes
  • 1 cup cooked beans or lentils Optional; add leftover proteins to make it heartier.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Adjust to taste.
  • 1 teaspoon dried herbs (thyme, oregano, or basil) Feel free to add more herbs for flavor.
  • 2 cloves garlic, minced

Method
 

Cooking Instructions
  1. In a slow cooker, combine all the ingredients.
  2. Stir well to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Taste and adjust seasoning as needed.
