Ingredients
  

For the hash browns
  • 4 cups frozen shredded hash browns, thawed Thaw completely before cooking for even crispiness.
  • 3 tablespoons vegetable oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the filling
  • 6 large eggs Whisk together with milk.
  • ¼ cup whole milk
  • 7 ounces breakfast sausage, casings removed Use any preferred protein.
For the toppings
  • 1 cup shredded cheddar cheese
  • ½ cup salsa (mild or spicy) Adjust to preferred spice level.
  • 1 avocado, diced
  • 2 green onions, sliced
  • 2 tablespoons fresh cilantro, chopped (optional) Optional topping.

Method
 

Cooking the Hash Browns
  1. Heat 2 tablespoons of oil in a large nonstick skillet over medium-high heat.
  2. Add the hash browns in an even layer and sprinkle them with salt and pepper. Cook undisturbed for 5 to 7 minutes until golden and crispy.
  3. Flip the hash browns and cook for an additional 4 to 5 minutes. Once done, remove the hash browns and keep them warm.
Cooking the Sausage and Eggs
  1. Add 1 tablespoon of oil to the skillet and brown the sausage, breaking it up with a spatula. Remove the cooked sausage and set aside.
  2. In a bowl, whisk the eggs, milk, salt, and pepper together. Pour this egg mixture into the skillet and gently scramble over medium heat.
  3. Remove the eggs from heat when they are soft and set aside.
Assembly
  1. Divide the warm hash browns into four bowls.
  2. Top each bowl with scrambled eggs, sausage, and cheese.
  3. Add salsa, diced avocado, green onions, and cilantro as desired. Serve the bowls right away so the hash stays crisp.
