Ingredients
  

For the Tea
  • 1 cup water [see note]
  • 1 cup whole milk
  • 1 inch piece ginger (crushed)
  • 4 teaspoons tea leaves Use fresh and quality tea leaves for best taste.
  • 4-6 teaspoons sugar Adjust the level of sugar to taste.
  • 1 inch piece cinnamon stick
  • 2 whole cloves
  • 1 teaspoon fennel seeds
  • 3-4 whole green cardamom
  • 2-3 whole black peppercorns For a spicier tea, add more black peppercorns or ginger.
  • A pinch of saffron Optional for garnish.

Method
 

Preparation
  1. Boil water along with ginger over medium heat.
  2. As the water boils, crush the spices into a fine powder using a mortar and pestle. Set it aside.
Brewing the Tea
  1. Once the water comes to a boil, add tea leaves and sugar. Let the tea leaves steep in the water for about 1-2 minutes.
  2. Add milk to the tea mixture and let it come to a boil.
  3. Add the powdered spices and mix well. Turn off the heat in about 30 seconds.
  4. Strain and serve immediately with a pinch of saffron (if using).

Notes

Masala tea is best enjoyed fresh. If you have leftover tea, store it in an airtight container in the refrigerator for a day. When ready to enjoy again, simply heat it up.
