Main Ingredients
  • 3 very ripe bananas The browner and spottier, the better for sweetness.
  • 1/3 cup melted butter Can substitute with coconut oil for a dairy-free option.
  • 3/4 cup granulated sugar Can substitute with 2/3 cup honey.
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts or chocolate chips Optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a 4×8 inch loaf pan.
  2. Mash your bananas in a large mixing bowl until smooth but still chunky.
Combine Wet Ingredients
  1. Add the melted butter to your mashed bananas and stir until mixed.
  2. Mix in the granulated sugar, beaten egg, and vanilla extract. Whisk until well combined.
Add Dry Ingredients
  1. Sprinkle the baking soda and salt over the wet mixture.
  2. Gently fold in the flour, stirring just until no dry flour is visible, usually about 12-15 strokes.
  3. If using nuts or chocolate chips, fold them in with a few more strokes.
Bake
  1. Pour the batter into the prepared loaf pan, smoothing the top gently.
  2. Bake in the preheated oven for 55-60 minutes or until a toothpick inserted comes out clean.
  3. After about 35 minutes, cover the top loosely with aluminum foil to prevent over-browning.
Cool
  1. Let the banana bread cool in the pan for 10 minutes.
  2. Transfer to a wire rack to cool completely before slicing.

Notes
