Dressing
  • 3 tablespoons Rice vinegar
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil Can substitute with olive or neutral oil
  • 1 teaspoon Sugar
  • 1 teaspoon Chili oil or red pepper flakes Adjust according to spice preference

  • 1 tablespoon Sesame seeds

Method
 

Preparation
  1. Wash and thinly slice the Persian or English cucumbers.
  2. Sprinkle the cucumber slices with salt and let them sit for 10 minutes to draw out excess moisture.
  3. In a bowl, mix the rice vinegar, soy sauce, sesame oil, sugar, and chili oil or red pepper flakes until well combined.
  4. Rinse the cucumbers under cold water to remove excess salt, and gently pat them dry.
  5. Combine the cucumbers with the dressing and toss to coat well.
  6. Let the salad sit for 10 minutes before serving to allow the flavors to meld.
  7. Garnish with sesame seeds and minced garlic, if using, before serving.
