For the Drinking Chocolate
  • 3/4 cup whole milk
  • 4 ounces good-quality 70% dark chocolate (finely chopped) Use high-quality chocolate for the best flavor.
  • 1 teaspoon light brown sugar (lightly packed, more or less to taste) Adjust to fit your sweetness preference.
  • 1/4 teaspoon pure vanilla extract
  • 1/8 teaspoon instant espresso powder (use decaf if you want)
  • 1 small pinch salt

Method
 

Preparation
  1. Chop the chocolate finely for easier melting.
  2. Heat the milk in a small saucepan over medium heat until steaming.
  3. Whisk in the chocolate until the mixture is smooth and creamy.
  4. Add the brown sugar, vanilla, espresso powder, and salt. Stir well.
  5. Continue to heat the mixture until steaming, whisking frequently, then remove from heat.
  6. Serve immediately. Optionally, add whipped cream on top for a special treat.
