- In the crockpot, combine chicken thighs, chicken broth, olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is fully cooked and tender.
Making Tzatziki
- While the chicken cooks, make the tzatziki. In a bowl, mix Greek yogurt, grated cucumber, dill, and lemon juice. Stir well and set aside.
Shredding Chicken and Serving
- Once the chicken is cooked, shred it with two forks.
- Warm the pita bread.
- Fill each pita with shredded chicken and top with tzatziki, tomatoes, red onion, and lettuce.
