Ingredients
  

For the Chicken
  • 2 pounds boneless, skinless chicken thighs Use thighs for best flavor and tenderness.
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 2 tablespoons dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Tzatziki
  • 1 cup Greek yogurt
  • 1 medium cucumber, grated
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice For tzatziki
For Serving
  • 4 pieces Pita bread
  • to taste Sliced tomatoes, red onion, and lettuce For topping

Preparation
  1. In the crockpot, combine chicken thighs, chicken broth, olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is fully cooked and tender.
Making Tzatziki
  1. While the chicken cooks, make the tzatziki. In a bowl, mix Greek yogurt, grated cucumber, dill, and lemon juice. Stir well and set aside.
Shredding Chicken and Serving
  1. Once the chicken is cooked, shred it with two forks.
  2. Warm the pita bread.
  3. Fill each pita with shredded chicken and top with tzatziki, tomatoes, red onion, and lettuce.

Notes
