For the Banana Bread
  • 3-4 medium or large bananas Use overripe bananas for added sweetness.
  • 2 Tbsp brown sugar For the banana mixture.
  • 1.5 tsp vanilla extract
  • 0.75 tsp ground cinnamon
  • 0.5 cup butter, softened Ensure it is softened for easier mixing.
  • 1 cup sugar For sweetness.
  • 2 large eggs Can be substituted for egg-free options.
  • 2 cups all-purpose flour Can be replaced with gluten-free flour for a gluten-free option.
  • 1 tsp baking soda
  • 0.25 tsp salt
  • 2 Tbsp sour cream (or Greek yogurt)
For the Crumb Topping
  • 1 cup flour For crumb topping.
  • 1 cup brown sugar For crumb topping.
  • 6 Tbsp butter (cold) For crumb topping.
  • 1 tsp cinnamon

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease two 8×4-inch pans.
  2. In a small bowl, mash the bananas, brown sugar, vanilla extract, and ground cinnamon together until smooth.
  3. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  4. Add the eggs to the mixture and beat until well combined.
  5. Sift the flour, baking soda, and salt into the wet mixture. Stir until just combined.
  6. Add the sour cream (or Greek yogurt) and mix well.
  7. Pour in the mashed banana mixture and mix until everything is combined.
Crumb Topping
  1. Prepare the crumb topping by mixing 1 cup of flour, 1 cup of brown sugar, and cold butter together in a bowl until crumbly.
Baking
  1. Pour the banana bread batter into the prepared pans. Sprinkle the crumb topping evenly over the batter.
  2. Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow to cool before slicing and serving.
