Preparation
- Preheat the oven to 350°F (175°C). Grease two 8×4-inch pans.
- In a small bowl, mash the bananas, brown sugar, vanilla extract, and ground cinnamon together until smooth.
- In a large bowl, cream the softened butter and sugar together until light and fluffy.
- Add the eggs to the mixture and beat until well combined.
- Sift the flour, baking soda, and salt into the wet mixture. Stir until just combined.
- Add the sour cream (or Greek yogurt) and mix well.
- Pour in the mashed banana mixture and mix until everything is combined.
Crumb Topping
- Prepare the crumb topping by mixing 1 cup of flour, 1 cup of brown sugar, and cold butter together in a bowl until crumbly.
Baking
- Pour the banana bread batter into the prepared pans. Sprinkle the crumb topping evenly over the batter.
- Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before slicing and serving.
