Salad Ingredients
  • 4 cups mixed greens (like romaine, spinach, and arugula) Use a mix of your favorite greens.
  • 1 cup cherry tomatoes, halved Add more or less according to your preference.
  • 1 medium cucumber, sliced Peel if desired.
  • 1 medium bell pepper, sliced Any color bell pepper works.
  • 1/2 medium red onion, thinly sliced Red onion adds a nice color and flavor.
  • 1/2 cup shredded carrots Pre-shredded carrots can be used.
  • 1/4 cup olives (optional) Choose your favorite type of olives.
  • 1/2 cup croutons (optional) Add for extra crunch.
  • to taste your choice of dressing (ranch, vinaigrette, etc.) Serve on the side or drizzled on top.

Method
 

Preparation
  1. Rinse all the vegetables under cool water.
  2. In a large bowl, add the mixed greens.
  3. Add the cherry tomatoes, cucumber, bell pepper, red onion, and shredded carrots to the bowl.
  4. If using olives, add them as well.
  5. Toss the salad gently to combine all the ingredients.
  6. Right before serving, sprinkle croutons on top if desired.
  7. Serve with your favorite dressing on the side.
