  • 3 pieces ripe bananas Use very ripe bananas for better sweetness.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon cinnamon sugar (for the swirl)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
  3. Mix in the baking soda and salt. Add the sugar, beaten egg, and vanilla extract, mixing well.
  4. Stir in the flour until just incorporated.
Assembly
  1. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar on top.
  2. Pour the remaining batter over and top with the rest of the cinnamon sugar.
  3. Use a knife to swirl the cinnamon sugar into the batter lightly.
Baking
  1. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for 10 minutes before transferring to a wire rack.
