Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
- Mix in the baking soda and salt. Add the sugar, beaten egg, and vanilla extract, mixing well.
- Stir in the flour until just incorporated.
Assembly
- Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar on top.
- Pour the remaining batter over and top with the rest of the cinnamon sugar.
- Use a knife to swirl the cinnamon sugar into the batter lightly.
Baking
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack.
