Ingredients
  

Spices and Flavorings
  • 3 sticks cinnamon sticks (plus more for garnish) Cinnamon sticks can also be used for garnish.
  • 1 teaspoon whole black peppercorns
  • 5 whole cloves
  • 4 pods green cardamom pods (crushed) Crushed cardamom pods release more flavor.
  • 2 pieces star anise
  • 1 inch piece fresh ginger (thinly sliced) Fresh ginger adds warmth and spice.
  • 2 bags black tea bags You can also use loose tea.
  • 2 teaspoons maple syrup (plus more to taste) Adjust sweetness to preference.
  • ground cinnamon (for dusting, optional) Optional garnish for flavor.
Milk
  • 2.5 cups almond milk (or any milk) Use any type of milk; use more for foaming.

Method
 

Preparation
  1. Place the cinnamon sticks, peppercorns, cloves, cardamom pods, and star anise in a small pot. Toast them over medium heat for 1 to 2 minutes, or until they smell fragrant.
  2. Add the almond milk and ginger, then reduce the heat to low. Gently simmer for 5 minutes.
  3. Turn off the heat and add the tea bags. Cover the pot and let the tea steep for 10 minutes.
Straining and Serving
  1. Set a fine mesh strainer over a bowl or measuring cup. Pour the tea mixture through the strainer to remove the spices, tea bags, and ginger.
  2. Stir in the maple syrup, adding more to taste. Pour the chai latte into mugs and top with foamed milk, if desired.
  3. Garnish each mug with a cinnamon stick and dust with ground cinnamon, if you like.

Notes

Adjust the spice levels according to your taste. Use different types of milk to change the flavor. Sweeten your chai latte to your liking with various sweeteners. For a different twist, try adding vanilla extract or turmeric.
