  • 1 pound chicken, diced Use boneless, skinless chicken for easier preparation.
  • 4 cups chicken broth Homemade chicken broth can enhance the flavor.
  • 2 cups diced potatoes Rustic potatoes like Yukon Gold work well.
  • 1 cup carrots, chopped Fresh carrots are preferable.
  • 1 cup celery, chopped Celery adds a nice crunch.
  • 1 large onion, chopped Yellow or white onions work best.
  • 3 cloves garlic, minced Adjust garlic to taste.
  • 1 teaspoon thyme Dried or fresh thyme can be used.
  • Salt and pepper to taste Adjust according to preference.
  • 1 cup corn or peas (optional) Add for extra flavor and texture.

Method
 

Preparation
  1. Place the diced chicken in the bottom of the crockpot.
  2. Add the chicken broth, potatoes, carrots, celery, onion, and garlic.
  3. Sprinkle in the thyme, salt, and pepper.
  4. Stir everything together.
Cooking
  1. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
  2. If adding corn or peas, stir them in during the last 30 minutes of cooking.
Serving
  1. Taste and adjust seasoning if needed before serving. Serve the soup hot in bowls.
  2. Top with fresh herbs like parsley or cilantro for extra flavor.
  3. Pair with crusty bread or a simple salad.
