Ingredients
  

For the bread
  • 4 ripe bananas, mashed Use very ripe bananas for best flavor
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour Do not overmix
For the streusel
  • 1 teaspoon cinnamon Adjust to taste
  • 1 cup brown sugar

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in melted butter.
  3. Mix in baking soda and salt.
  4. Add sugar, beaten egg, and vanilla extract, and mix until combined.
  5. Stir in flour until just incorporated.
Streusel Preparation
  1. Mix together the cinnamon and brown sugar in a separate bowl.
Assembly and Baking
  1. Pour a small amount of banana bread batter into the bottom of the loaf pan, then sprinkle a thick layer of the streusel mixture over it.
  2. Add more batter over the streusel layer, then sprinkle the remaining streusel on top before baking.
  3. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  4. Allow to cool before removing from the pan.
