Preparation
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in melted butter.
- Mix in baking soda and salt.
- Add sugar, beaten egg, and vanilla extract, and mix until combined.
- Stir in flour until just incorporated.
Streusel Preparation
- Mix together the cinnamon and brown sugar in a separate bowl.
Assembly and Baking
- Pour a small amount of banana bread batter into the bottom of the loaf pan, then sprinkle a thick layer of the streusel mixture over it.
- Add more batter over the streusel layer, then sprinkle the remaining streusel on top before baking.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before removing from the pan.
