Main Ingredients
  • 4 cups banana bread, cubed Use day-old or stale for best texture.
  • 2 cups milk
  • 3 large eggs
  • 1 cup sugar
  • 1 teaspoon vanilla extract Feel free to experiment with flavored extracts.
  • 1 teaspoon cinnamon Add a pinch of nutmeg for extra flavor.
Optional Ingredients
  • 1/2 cup raisins Optional, can substitute with other mix-ins.
  • 1/4 cup chopped walnuts Optional, can substitute with other nuts.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, whisk together the milk, eggs, sugar, vanilla extract, and cinnamon.
  3. Add the cubed banana bread to the mixture and gently stir to combine. If using, fold in raisins and walnuts.
  4. Pour the mixture into the prepared baking dish.
Baking
  1. Bake for 35-40 minutes, or until the pudding is set and the top is golden brown.
  2. Allow to cool slightly before serving. Enjoy warm!
