- In a large bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted butter until well combined.
- Add the sugar, eggs, and vanilla extract, mixing well after each addition.
- In another bowl, sift together the flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined.
- Fold in the walnuts or pecans, chocolate chips, dried fruit, or any extra nuts if you are using them.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
- Bake in the preheated oven for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Let the banana bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
