Preparation
- Preheat the oven to 325°F (165°C) and grease two 8.5 x 4.5-inch loaf pans.
- In a large bowl, cream together the softened butter and white sugar until smooth.
- Beat in the eggs until well combined.
- Stir in the sour cream, mashed bananas, and vanilla extract.
- Add the all-purpose flour, salt, cinnamon, and baking soda into the wet mixture and stir until just combined; do not overmix.
- If using, gently fold in the chopped walnuts.
- Divide the batter evenly between the two prepared loaf pans.
Baking
- Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center comes out clean.
