  • 1/3 cup softened butter
  • 1 1/4 cups white sugar Add an extra 1/4 cup for sweeter bread.
  • 2 large eggs
  • 4 large very ripe bananas, mashed Ensure bananas are very ripe for the best flavor.
  • 1 cup sour cream Can be substituted with plain yogurt or buttermilk.
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour Can swap some for whole wheat flour.
  • 1 tsp cinnamon
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chopped walnuts Optional, you can use other nuts or omit.

Method
 

Preparation
  1. Preheat the oven to 325°F (165°C) and grease two 8.5 x 4.5-inch loaf pans.
  2. In a large bowl, cream together the softened butter and white sugar until smooth.
  3. Beat in the eggs until well combined.
  4. Stir in the sour cream, mashed bananas, and vanilla extract.
  5. Add the all-purpose flour, salt, cinnamon, and baking soda into the wet mixture and stir until just combined; do not overmix.
  6. If using, gently fold in the chopped walnuts.
  7. Divide the batter evenly between the two prepared loaf pans.
Baking
  1. Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center comes out clean.
