  • 2 cups Sweet potatoes, cubed Cut into small, even cubes for even cooking.
  • to taste Herbs (your choice, e.g., rosemary, thyme) Use fresh herbs for best flavor, but dried also work.
  • to taste pinch Salt
  • to taste pinch Pepper
  • 1 tablespoon Olive oil Or cooking oil of choice.

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Cut sweet potatoes into cubes and toss with olive oil, herbs, salt, and pepper.
  3. Roast in the oven for about 20 minutes until tender and golden.
Cooking
  1. In a skillet, cook the chicken apple sausage over medium heat until browned and cooked through.
  2. In another bowl, whisk the eggs with a pinch of salt and pepper.
  3. Scramble the eggs in a pan until fluffy.
Assembly
  1. Assemble the bowl: start with a bed of roasted sweet potatoes, add the cooked sausage, and top with creamy scrambled eggs.
