Method
 

Preparation
  1. Wash and dry the potatoes thoroughly, leaving the skins on for extra texture or peeling them if you prefer.
  2. Slice the potatoes into 1/8-inch rounds using a mandoline or a sharp knife.
  3. Optional: Soak the sliced potatoes in a bowl of cold water for 5-10 minutes to remove excess starch. Drain and pat them dry completely.
Cooking
  1. In a large mixing bowl, toss the potato slices with olive oil, salt, black pepper, garlic powder, paprika, and dried herbs until evenly coated.
  2. Preheat the air fryer to 400°F for 2 minutes.
  3. Arrange the potato slices in the air fryer basket in a single layer, slightly overlapping if needed. Avoid overcrowding.
  4. Air fry the potatoes for 10 minutes, then flip or shake the basket. Continue cooking for another 2-4 minutes until golden and crisp at the edges.
  5. Remove crispy slices as they finish and allow the remaining slices to cook as needed. Shake the basket halfway through to prevent sticking.
  6. Transfer the potatoes to a plate and sprinkle with Parmesan and fresh herbs if desired. Serve hot.
