Preparation
- Wash and dry the potatoes thoroughly, leaving the skins on for extra texture or peeling them if you prefer.
- Slice the potatoes into 1/8-inch rounds using a mandoline or a sharp knife.
- Optional: Soak the sliced potatoes in a bowl of cold water for 5-10 minutes to remove excess starch. Drain and pat them dry completely.
Cooking
- In a large mixing bowl, toss the potato slices with olive oil, salt, black pepper, garlic powder, paprika, and dried herbs until evenly coated.
- Preheat the air fryer to 400°F for 2 minutes.
- Arrange the potato slices in the air fryer basket in a single layer, slightly overlapping if needed. Avoid overcrowding.
- Air fry the potatoes for 10 minutes, then flip or shake the basket. Continue cooking for another 2-4 minutes until golden and crisp at the edges.
- Remove crispy slices as they finish and allow the remaining slices to cook as needed. Shake the basket halfway through to prevent sticking.
- Transfer the potatoes to a plate and sprinkle with Parmesan and fresh herbs if desired. Serve hot.
