Ingredients

  • 12 oz. (340g) fettuccine or spaghetti

  • four cups (960ml) hen or vegetable broth

  • 1 cup (240ml) heavy cream

  • 1 cup (100g) freshly grated Parmesan cheese

  • 4 cloves garlic, minced

  • 2 tbsp unsalted butter

  • 1 tbsp olive oil

  • 1 tsp salt

  • 1 tsp salt

  • half of tsp black pepper

  • half of tsp black pepper

  • 1 tsp dried oregano (optional)

  • Fresh parsley for garnish

Directions

  • Prepare the Base:
    Heat a large skillet or pot over medium heat. Add olive oil and butter. Once the butter is melted, add the minced garlic and sauté for 1-2 minutes until fragrant. Be careful not to burn the garlic.
  • Cook the Pasta:
    Add the fettuccine or spaghetti to the pot and pour in the broth. Stir to ensure the pasta doesn’t stick together. Bring the broth to a boil, then reduce the heat to medium-low and simmer. Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.
  • Add Cream and Cheese:
