Ingredients
12 oz. (340g) fettuccine or spaghetti
four cups (960ml) hen or vegetable broth
1 cup (240ml) heavy cream
1 cup (100g) freshly grated Parmesan cheese
4 cloves garlic, minced
2 tbsp unsalted butter
1 tbsp olive oil
1 tsp salt
1 tsp salt
half of tsp black pepper
half of tsp black pepper
1 tsp dried oregano (optional)
Fresh parsley for garnish
Directions
- Prepare the Base:
Heat a large skillet or pot over medium heat. Add olive oil and butter. Once the butter is melted, add the minced garlic and sauté for 1-2 minutes until fragrant. Be careful not to burn the garlic. - Cook the Pasta:
Add the fettuccine or spaghetti to the pot and pour in the broth. Stir to ensure the pasta doesn’t stick together. Bring the broth to a boil, then reduce the heat to medium-low and simmer. Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed. - Add Cream and Cheese:
Once the pasta is cooked, pour in the heavy cream and sprinkle the Parmesan cheese over the top. Stir well to combine everything and create a creamy sauce. Continue to cook for 2-3 minutes until the sauce thickens and coats the pasta evenly. - Season to Taste:
