Ingredients

  • 12 oz. (340g) fettuccine or spaghetti

  • four cups (960ml) hen or vegetable broth

  • 1 cup (240ml) heavy cream

  • 1 cup (100g) freshly grated Parmesan cheese

  • 4 cloves garlic, minced

  • 2 tbsp unsalted butter

  • 1 tbsp olive oil

  • 1 tsp salt

  • half of tsp black pepper

  • 1 tsp dried oregano (optional)

  • Fresh parsley for garnish

Directions

  • Prepare the Base:
    Heat a huge skillet or pot over medium warmness. Add some olive oil and melt a bit of butter. Once the butter is melted, upload the minced garlic and sauté for 1-2 mins till fragrant. Be careful not to burn the garlic.
  • Cook the Pasta:
    Add the fettuccine or spaghetti to the pot and pour in the broth. Stir to ensure the pasta doesn’t stick together. Bring the broth to a boil, then reduce the heat to medium-low and simmer. Cook for about 10-12 minutes, stirring now and again, until the pasta is al dente and maximum of the liquid has been absorbed.
  • Add Cream and Cheese:
    Once the pasta is cooked, pour in the heavy cream and sprinkle the Parmesan cheese over the top. Stir properly to mix the whole thing and create a creamy sauce. Continue to cook for 2-3 minutes until the sauce thickens and coats the pasta evenly.
  • Season to Taste:
    Season the pasta with salt, black pepper, and oregano (if using). Stir well to incorporate all the flavors.
  • Serve:
    Remove the pot from the heat and garnish with sparkling parsley. Serve immediately with extra Parmesan cheese if desired.
