12 oz. (340g) fettuccine or spaghetti
four cups (960ml) hen or vegetable broth
1 cup (240ml) heavy cream
1 cup (100g) freshly grated Parmesan cheese
4 cloves garlic, minced
2 tbsp unsalted butter
1 tbsp olive oil
1 tsp salt
half of tsp black pepper
1 tsp dried oregano (optional)
Fresh parsley for garnish
Directions
- Prepare the Base:
Heat a huge skillet or pot over medium warmness. Add some olive oil and melt a bit of butter. Once the butter is melted, upload the minced garlic and sauté for 1-2 mins till fragrant. Be careful not to burn the garlic. - Cook the Pasta:
Add the fettuccine or spaghetti to the pot and pour in the broth. Stir to ensure the pasta doesn’t stick together. Bring the broth to a boil, then reduce the heat to medium-low and simmer.
